Tips on ensuring you get crunchy chips:
- Ensure the beet chips are cut very thinly as the recipe calls for
- Stacking a baking sheet on top of the beet chips does help it from curling quite a bit
- Expect the beet chip size to shrink at least to 1/3 to 1/2 from its original size because the water content has evaporated
