Looking for an alternate way to eat oatmeal and blueberries? I found this recipe from runningwithspoons.com and this one stood out because it used Greek yogurt instead of oil, and used honey instead of sugar. The end result, a deliciously moist and tasty muffin, and a great start to breakfast.
I made some substitutions to the ingredients below (changes are in red text below). The link above has the instructions and nutrition facts
- 1 cup (120 g) all-purpose flour
- 1 cup (80 g) quick oats (instead of old fashioned rolled oats)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 large egg
- 1 cup (225 g) coconut flavored Greek yogurt (instead of plain)
- 1/4 cup (80 g) honey
- 2 Tbsp (24 g) coconut palm sugar (did not use)
- 1/4 cup (60 ml) unsweetened almond milk
- 2 tsp vanilla extract
- 1 cup (140 g) blueberries, frozen or fresh
